Chicken n Barley

Cowboy and The Mom both grew up in Texas families, from generations of Texans who ate pretty traditional food.  The last 12.75 years of marriage have taken us to various places in the US and the World.
During this time, we have learned to try new food.  The Mom has been making food for Buckaroo, so more attention has been paid to the quality and variety the family is eating.

January, 2010, Cowboy, The Mom, and some friends visited Saint Louis for the first time.  The Iron Barley was one of the yummy stops.  The Mom enjoyed some Barley Risotto for the first time.  A first for barley and risotto!  The Mom acquired some pearled barley for use in the making of food for Buckaroo and then got to thinking.

Chicken n Barley

1/4 cup pearled barley

3 1/2 cups water (these amounts may be adjusted based on the package instructions)

3 beef bouillon cubes

3 Tablespoons coconut oil

4 frozen chicken breasts

Salt, Pepper, Garlic, Onion to taste

Spray a 9x13 pan with cooking spray.  Mix barley, water, and bouillon in the pan.  Lay the chicken on top.  Place pieces of coconut oil on chicken and around the pan on barley.  Season to taste.  Cook at 300 degrees until chicken is tender and barley is done.

I put this in, with frozen breasts, for about 2 1/2 hours (while we were at church).  This could be done in the Crock Pot as well. I would think it would be nice with sauteed onions and bell peppers or some squash or maybe some cheese.  I hope this works for you!
