I once saw a shirt that said "if you are what you eat I am cheap, fast, and easy." It has kind of been my motto (mostly as a joke) for several years now.
As I have tried to be more conscious of what fuel we use for our bodies yet I have not wanted to give up my other motto. A dilemma ensues ...
So here is a recipe for cheap, fast, and easy chili...my compromise of the day.
My Easy Chili
2 pounds Ground meat
1 Onion, chopped
Chili powder or Paprika, if you don't have chili powder
Cumin
Garlic (oil, powder, salt, fresh whatever you happen to have)
1 can Rotel tomato
2 cans tomato sauce
Saute your onions in your preferred oil or grease (I have used anything from coconut oil to bacon grease to to butter to garlic oil). Add ground meat and brown. While browning, blend/food process the Rotel tomatoes to a smooth consistency (you never know the tomatoes are there this way and your kids and/or tomatophobes won't be scared). After the meat is browned and drained, pour in all the tomato goodness. Season with cumin, garlic, and chili powder to taste. Simmer this until you are ready to chow, but no more than a couple of hours. You can put it in the crockpot for this last step. It really is that easy.
